For its actual intent, it keeps you from using areas of an EF-S lens that were never supposed to be used.

What is the advantage of the crop feature on the Canon R5? I've read that it offers nothing vs using full frame and cropping. Is this true?

Smaller file size. I have R6 and have used it when taking pictures of airplanes at crusing altitude. The hard part is to remember to turn off crop mode.

It seems to me that it is more likely to find the eye of a small bird far away in crop mode. Auto Focus works better for small animals far away in crop mode.

I often use crop mode.
