Learning to use my new lens. What is the purpose/function of "Full/0.5M-infinity, 0.3M-0.5M? When would you use each selection?

To help speed up focusing. For example, if you are doing a shoot where the subjects are going to always be within 30 to 50 cm from the focal plane, then you can use that option. This will instruct the lens not to worry about focusing beyond 50 cm and thus can speed up focus time.
