date and time on pic

I set the date and time on the Powershot SX260 HS thinking it was to record when the pic was taken, but it shows up on the pic! How do I remove it?

You can't. It has been stamped onto your photo. The only way to remove it is using software like Photoshop to clone out the date. It is part of your photo now.
